One
thing I was told as a kid was to never look a gift horse in the mouth. When the
opportunity to live and work in Niagara’s wine country came along, I jumped upon
it. It was a big change that required moving everything I owned to a house I had not yet found. My friends Robin and Marty bravely offered to put a roof over my head and feed me until I found an abode of my own. All my worldly possessions have been relegated to a ten by twenty storage unit. In a nutshell, I turned my life upside down. Although I miss my friends in London, my new colleagues have welcomed me with
open arms. Every member of this fine institute has a serious commitment to
education and passing on their culinary skills to eager minds. I am honoured to
be a part of such a dedicated team. |

Right before I started the dreaded task of packing everything I own into empty wine cases, a notification of a cheap flight from Detroit to San Francisco came into my inbox. Clearly this was not the best time to travel, but I told myself it was to be a brief visit, and I can always pack when I get home. Here are my notes from my whirlwind escape to California.
